January always feels like it lasts forever and while I could eat soup daily, it’s nice to add something into the rotation that feels, tastes and looks different than usual. Still tastes amazing, but isn’t the same comfort food that I usually find in my kitchen this time of year. It’s such a nice twist!
One of the reasons I love this dish so much is because it’s super refreshing. It makes it *feel* like you’re eating something summery and fresh! It feels like it’s not -20 degrees outside and we are not covered in two feet of snow!
It’s also a fun dish that you can make for friends because it comes together so quickly. Or even in the warmer months for happy hour – these are a dream.
My kids love them because their all-time favorite food is tacos, and these are very taco-like. They really enjoy crunchy watery lettuce like iceberg or romaine. So it’s fun for them to scoop the beef into the lettuce cup and eat it like that.
I won’t tell you that Emilia always asks to douse her in ketchup… but here we are.
Another win: these can easily be prepared ahead of time for lunch or even prepped for dinner. You can make the beef mixture and keep it stored in the fridge. Tear and wash the lettuce cups too. When it comes time to eat, just heat and assemble!
They have SO much flavor. The beef mixture with the honey, soy sauce, ginger and garlic is fabulous. Finished with toasted sesame oil? That just takes it over the top. Gosh I love toasted sesame oil so much I could practically drink it.
I also love to use red bell peppers and green onions. You can throw in anything else you love! Broccoli, snap peas, whatever you have on hand and enjoy. I like to throw the veggies right in with the beef because they soften oh-so slightly. I still need that crispy crunchy when it comes to the lettuce cups.
When it comes to serving, I grate some carrots too! I love to finely grate carrots and stick them in the lettuce cups, then add the beef on top. LOVE.

These beef lettuce wraps are an easy, delicious weeknight meal that you have to try! The beef is browned with red peppers, green onions, honey, garlic and ginger then served in crisp, refreshing lettuce wraps. They are so satisfying and taste amazing!
Heat the olive oil in a skillet over medium heat. Add the bell pepper with a pinch of salt. Cook, stirring often, until it’s slightly soft, about 3 minutes.
Add in the ground beef with another pinch of salt and pepper. Break it apart and brown it until completely cooked through and even crisp. Stir in the garlic and the ginger.
In a small bowl, whisk together the honey, soy sauce, sesame oil and rice vinegar. Pour it into the skillet and stir, making sure everything is combined. Cook for 2 to 3 more minutes. Stir in the green onions. Remove the mixture from the heat.
Make sure the lettuce leaves are thoroughly cleaned and dried. Top with some of the grated carrots and a few spoonfuls of the ground beef. Top with sesame seeds, extra green onions and soy sauce if you wish!
