Dubai is one of the world’s most dynamic and multicultural gastronomic cities — a global crossroads no serious food lover should overlook. Within this context, the international trade fair Gulfood has, in recent years, amplified the city’s culinary narrative through Dubai World Cuisine, a unique platform designed to showcase its gastronomic ambition. As a grand finale, the 2026 edition concludes on Thursday, January 29th with an eight-hands dinner bringing together Francisco Araya (Araya, Singapore), Tristin Farmer of Maison Dali and Jitin Joshi of Revolver. The experience is completed with a bespoke pairing by mixologist Vítor Lourenço, who leads Revolver’s drinks programme and shapes the liquid narrative of this closing dinner. An event that brings together Michelin stars, global careers and a contemporary outlook, where cuisine and mixology meet at the highest level.
As such, chef Francisco Araya, from Singapore’s Araya, is the guest chosen for the closing dinner of Dubai World Cuisine, in a collaboration that brings together two of Dubai’s most technically driven kitchens: Maison Dali, led by Tristin Farmer, and Revolver, under Jitin Joshi. Araya is the world’s first Chilean restaurant awarded a Michelin star, combining Chilean memory with Japanese precision, and in just one year has been recognised by Michelin, The Straits Times and The Best Chef Awards. Together, they promise an evening shaped by shared rigour and vision, bringing Dubai World Cuisine to a close with a singular, collective experience.
Seven courses for a one-night finaleAcross seven courses, the menu will unfold as a sequence of dishes reflecting the distinct personalities and techniques of chefs driven by an obsession with product, precision and flavour control. Each course offers a personal reading of their culinary universes, brought together in a menu conceived specifically to close the programme.
A one-night-only experience that only a few will have the chance to enjoy and a fitting synthesis of Dubai’s position as one of the world’s leading gastronomic powerhouses.
